Wendi Dee over at Pure Jeevan is a genius when it comes to un-cooking. Here is a recipe she sent out to those of us who wait on pins and needles for the latest and greatest installment. You can join her mailing list there. In the same newsletter she also sent a recipe for ice cream cake. Wow! Here are her pictures of the potato pancakes and ice cream cake. And now my pictures....
I started out with peeled raw sweet potatoes of 2 varieties - one light yellowish and one a traditional orange.
I used my food pro with the grating blade to shred them - super fast and easy, and the clean up is lickety split when you do it right away. (Funny about that - I was talking to Mom and mentioned this fact and she about fell off her chair at the thought that I might let my dirty food pro bowl sit in all its dirty splendor for longer than a nanosecond {or *gasp* overnight}!) (Also, how do you like those parentheticals???)
When everything was mixed up - use a gigantic bowl to make this easier for yourself - I put them on my D sheets with Teflex (you can line them with plastic wrap, too) and let them dehydrate until I could stand it no more.
You'll notice there are no pretty 'after' photos of neatly arranged food on vibrantly colored plates. Yep, they were good enough to go rather quickly.
I made these in the evening and of course they wouldn't be ready for dinner, so I used some of the leftover mixture (don't look, Wendi!) and fried them up like a cooked potato pancake. They didn't hold together like one made with eggs would, but they were flippable all the same. More like hash brown patties than a pancake. We enjoyed them both cooked AND raw. How about that?!? A recipe that does double duty! Thanks, Wendi!
